Looks messy, but flu and ear infection is my excuse 🙂

French bought duck, fondant pots, petit pois peas and a gravy made from the sous vide bag and red wine.

I always chuck my bag juice as some recipes I've read say they'll be rank. Does it doffer from meat to meat or depend what extras you've put in the bag?
 
Fresh fish Tuesday smoked haddock on spinach, homemade pesto, scallops bacon and asparagus topped with egg and moray sauce.

I guess it depends on what's in the bag......In this bag was just orange peel and sea salt with the juices of the sous vide duck. These were strained into a stock and made the gravy and according to the OH was really tasty.
Pretty much do the same with steaks, some fish and throw if chicken.

It is something I've not read up on tbh and I just go by what I would consider to be a decent stock or not.
 
Tonight I did stir fry Singapore noodles with a sticky sweet & sour sauce and added chopped veg and finished with pan fried salmon.

Visiting my Warsaw team - they were very excited about the Steak Tartare dish at the restaurant so I thought I'd better give it a go.
 
Made some crispy shredded chilli beef tonight :)

Did you deep fry all the beef at once or place in bit by bit?

I did a initial 30-60 second fry in two batches and then when that was done re-fried for a second time in two batches for 3 minutes each - apparently makes it crispier.

Actually medium well on the flag, but was more slightly medium rare.

Rare as in bloody, or rare as in uncommon? I do hope it's the latter. I like mine well done and slightly scorched :cool:

Good quality house prepped steak and cooked how you like it.

Place down the road was even bloodier the other week.
