I bought a copy of Windows 8 direct from Microsoft for a cost of £24.99 and instantly hated it. Within hours I had removed it and reinstalled my previous Windows 7 Ultimate OS.

Can I legally sell the product key (now it's been removed from my PC) and disc I burned from the download link?

I wouldn't want to risk doing so if I'm breeching any T&C's.

Unlike previous versions, Windows 8 activates itself automatically soon after installing, so that's going to be a major issue when it comes to using it on a different PC.

Indeed if you haven't activated it, you can't really have given it any use. For example you can't personalise without activating.

To be fair it isn't actually that much of a change to windows 7 despite at first glance looking like a huge change.
